The right marinade can really make the meal! The more acidic the marinade the less time you need to marinate the meat. Fish and seafood generally should be marinated from 20 minutes to one hour; chicken for at least half an hour, but no more than six; pork should be marinated between two and four hours. Beef, by contrast, should be marinated overnight.
Rubs can be either dry or wet and can be worked into the meat anywhere from an hour before cooking to the night before.
