ingredients

1 clove garlic, crushed
10 allspice berries, crushed
1/2 teaspoon finely chopped rosemary leaves
2 tablespoons olive oil

directions

Combine the garlic, allspice berries, rosemary, and olive oil in a mortar. Crush with a pestle, mixing until well blended.

Use the rosemary and allspice rub immediately on beef, poultry, pork, or lamb before grilling or roasting.
