That's right, even veggies can use a little help on the grill. This light rub will work on almost any veggie you want to grill.
1/4 cup toasted ground cumin
1/4 cup ground coriander
1/4 cup dry mustard
1 teaspoon freshly ground black pepper
sea salt, to taste
Combine the seasonings in a bowl and mix well. Add the amount of salt as desired - you can also omit it and add it to taste when cooking the vegetables.
Use the rub immediately or store in an airtight container at room temperature for up to 3 months.
To use, rub the vegetables with the mixture on all sides. Grill using indirect heat.
Good on asparagus, corn, eggplant, green tomatoes, artichokes, squash, bok choy, beets, carrots or onions. Try it on fish and pork, too.
