1 teaspoon black pepper
1/2 teaspoon ground red pepper (cayenne)
1/2 teaspoon white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons vegetable oil
directions
Mix all ingredients except oil.
Brush both sides of chicken with 1 tablespoon of the oil; rub with spice rub. Heat remaining oil in 12-inch nonstick skillet over medium heat.
Cook chicken in oil 8 to 10 minutes, turning once, until chicken is no longer pink in center.
