Trout
Trout is a freshwater fish. It has very delicately flavored flesh and is higher in fat than other fish but still a healthy choice. You can purchase it both fresh or frozen and it's often sold whole or in fillets. You can also get smoked trout (which is delicious!).
If you can't find trout at your local fish market or grocery store, you can substitute salmon in these recipes. Other good substitutes are char, shad, and ocean perch.
