ingredients
4 medium trout, dressed
1 bunch dill or fennel fronds
2 tablespoons sunflower oil
salt and freshly ground black pepper
4 lemon wedges
directions
Preheat the oven to 350 degrees F.
Stuff each trout cavity with a frond of dill or fennel. Brush the trout with the oil and season with salt and pepper to taste, inside and out.
Place in a baking dish or roasting pan large enough to hold them in a single layer. Bake for 12-15 minutes, until the flesh flakes easily and is opaque. Serve with the lemon wedges to squeeze over.
