Grits

Grits

Grits, or more properly named "hominy grits", are made from corn that has the bran and germ removed from the kernels. It's a Southern US favorite that can be served sweet or savory, for breakfast or as a side dish.

Dry grits are combined with liquid (water or milk usually, but we've even seen recipes that call for beer!) and then boiled until the mixture absorbs all of the liquid. They can be flavored and served immediately, or put into a casserole dish and baked. The trick in cooking grits is to constantly stir the mixture until the liquid is absorbed. If you stop stirring the grits will become gummy. And gummy grits aren't pretty.

You can also purchase instant grits which don't need to be stirred and can even be made in the microwave. However, don't try to pass these off to a true Southerner, they'll know the difference!
