Sweet Corn Grits

ingredients
1 cup white corn grits, course ground
2 cups corn broth
1 cup whole milk
1 onion, medium-fine dice
4 corn on the cob, shucked and kernels sliced off the cob
2 cloves garlic, minced
1 ounce butter
1 ounce extra virgin olive oil
2 ounces mascarpone cheese
2 ounces American or Parmesan cheese, grated
salt and pepper
Corn Broth
4 shucked corn cobs (from above)
1 medium onion, rough dice
1 clove garlic, crushed
1 bay leaf
2 fresh thyme sprigs
2 ounces butter
1 leek, sliced and washed
1 quart water
directions
Sweat onions and garlic until translucent. Add liquid and grits, bringing to a simmer and cooking slowly for 20 minutes. Finish with mascarpone and Parmesan cheese. Adjust consistency if necessary with remaining corn broth.
For Corn Broth: Chop corn cobs into 1" coins. Sweat corn and all ingredients with butter until fragrant and translucent. Add water and simmer corn broth for several hours. Strain broth, discard solids and reserve for grits.
