Guacamole
The name guacamole comes from the Aztec word for avocado, ahuacatl. The Spanish settlers found it easier to pronounce as aguacate. The Aztecs added "molli", or sauce, to the name when describing the mashed avocados, or "ahuacamolli" which eventually became "guacamole".
Because avocados discolor easily it's important to add the lime juice. The acid will prevent browning and keep the green color of the avocados nice and bright.
