ingredients
3 large avocados, halved, pitted and peeled
1/2 cup chopped red onion
3/4 cup chopped cilantro
1/2 red bell pepper, finely chopped
1 small tomato, finely chopped
2 tablespoons fresh lime juice
2 tablespoons olive oil
1 jalapeno pepper, minced
1/2 teaspoon dried Mexican oregano
1/2 teaspoon minced fresh garlic
salt
black pepper
tortilla chips
directions
Mash avocados coarsely in large mixing bowl with back of spoon. Add onion, cilantro, red pepper, tomato, lime juice, olive oil, jalapeno chili, oregano and garlic. Mix well.
Season to taste with salt and pepper and dash more dried oregano and garlic, if needed.
Cover and chill up to 3 hours. Serve with tortilla chips.
