Chipotle Restaurant Style Guacamole
- add review
- #90257
under 30 minutes
ingredients
1 ripe avocado
1/2 small red onion, finely chopped
1/2 lime
1/2 jalapeno (more to taste), chopped
1 handful cilantro, roughly chopped
2 pinches salt
1 clove garlic, minced (optional)
directions
Cut the avocado in half and remove the pit. Scrape the flesh out with a fork. Before mashing, squeeze the lime over the avocado. The lime juice will prevent the avocado from browning as well as add some flavor.
Add the onion, jalapeno, and salt and mix well.
Once mixed, add in the chopped cilantro and stir. Grab a chip and give it a taste!
cook's notes
Chipotle does not use garlic in their guacamole, but I add it sometimes because it gives some nice extra flavor.

It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

I worked for Chipotle for 2 years and the recipe looks to be right (even though theirs was for 40 Avocados). However, they never used garlic.
