Goat Cheese And Pistachio Guacamole

ingredients
2 ripe avocados, peeled and seeded
1/2 cup finely crumbled, chilled fresh white goat cheese
1/4 cup chopped fresh cilantro
2 tablespoons chopped and toasted pistachio nuts
1/4 teaspoon crushed red pepper flakes or to taste
2 cloves garlic, finely chopped
directions
Coarsely mash (do not puree) avocados. Fold in remaining ingredients.
NOTE: Guacamole is best made as close as possible to serving. For short-term storage seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.
