Oysters
Oysters are a mollusk (shellfish) that can be eaten raw (on the half shell) or cooked in various ways. You can purchase them fresh, unshelled, on the half-shell, or shucked and packed in their liquor. You can also get them canned, either plain or smoked.
If you can't get fresh oysters you can use clams or mussels in place of them in many recipes. You can also substitute canned oysters in most recipes.

oyster myth:
There is a saying that warns diners to avoid eating oysters in any month that doesn't have an "r" in it. This really isn't true. Oysters are safe to consume year-round but they aren't as good in the summer months. The cold water oysters are considered the safest ones to eat, such as from the North Atlantic or Pacific coasts. It's also recommended to avoid Gulf Coast oysters.
