24 ounces canned oysters and liquid
3 1/2 cups coarsely crushed saltine crackers
2/3 cup freshly grated Parmesan cheese
2 eggs, beaten
2 tablespoons dry sherry
1/2 cup melted butter, divided

directions

Grease the inside of the crock pot well.

Combine the oysters and their liquid with the crushed crackers, grated cheese, beaten eggs, dry sherry, and half the melted butter in a bowl. Mix well so the crackers are well distributed through the mixture.

Transfer the oyster mixture to the crock pot. Drizzle the remaining melted butter over the top of the oyster mixture.

Cover the crock pot and cook on low heat for 2 hours or until the crackers have absorbed the liquid, the oysters are heated through, and the cheese is melted.

Serve the scalloped oysters hot.
