Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.
Oysters With Pancetta And Gorgonzola Cheese

ingredients
20 medium oysters, well drained
10 slices pancetta
freshly ground black pepper
5 ounces Gorgonzola cheese
salad greens (to line serving plate)
grape tomatoes for garnish
Kalamata olives for garnish
rosemary sprigs for garnish, if desired
directions
Preheat oven to 450 degrees F. Line a large baking sheet (about 12 to 15 inches) with parchment paper or foil.
Place the round pancetta slices in single layer on prepared pan. Place 2 oysters on center of each pancetta slice. Using a pepper mill, grind a small amount of black pepper atop each oyster. Top oysters with 1/2 to 3/4 teaspoon Gorgonzola cheese.
Fold up sides of pancetta to enclose oysters and cheese, twisting slightly at top to resemble a "purse" (The "purses" will open slightly while baking; this is to be expected).
Place pan in a 450 degrees F oven and bake for 8 to 10 minutes until hot and bubbly.
Meanwhile line serving plate with favorite greens. Place "purses" atop greens and scatter a few grape tomatoes and/or Kalamata olives around. Add a few rosemary sprigs.
