Custard is a mixture of egg and milk that is cooked until it is thick. The trick to making a smooth custard is by cooking it very gently, below the boiling point. Gentle heat is required to prevent curdling.
Oven-baked custards are baked in a water bath. Custard cooked on the stove top is best cooked using a double boiler, over simmering (not boiling) water. Stove top custards will be softer than baked custards and are usually used as a sauce or as the base for another dessert such as ice cream. Baked custards include more firm desserts like creme brulee and flan.
Custard should only be cooked to 170 degrees F (measured on a candy thermometer).
