This spicy cracker recipe uses cheddar and cayenne, but once you've got the general idea you can add in whatever flavors you like for your own creations.

1 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon hot chili powder
1 large pinch cayenne pepper
1/4 cup butter
1/2 cup finely grated Cheddar cheese
1 egg, beaten
1 tablespoon cold water
1 tablespoon sesame seeds
1 tablespoon poppy seeds

directions

Preheat the oven to 400 degrees F.

Sift together the flour, salt, mustard, chili powder, and cayenne and place in a large mixing bowl. Add the butter and cut into the flour mixture using a pastry cutter. Mix until it resembles breadcrumbs.

Add the cheese and mix well.

Whisk together the egg and water. Add two tablespoons of the egg mixture to the flour mixture and stir with a fork to form a stiff dough.

Turn the dough out onto a lightly floured work surface and knead until smooth.

Roll the dough out to a 12x6-inch rectangle. Cut in half lengthwise and place on a baking sheet. Brush the dough with the remaining egg mixture and sprinkle with the sesame and poppy seeds (you can do half each or a combination).

Cut the dough into smaller squares or triangles.

Place the baking sheet in the oven and bake for 10-12 minutes or until golden brown.

Remove from the oven and immediately transfer the chili cheese bites to a cooling rack. When completely cool, store in an airtight container at room temperature for up to 10 days.
