Enjoy a healthier twist on a favorite snack with our low fat nachos. Combining fresh veggies, no-fat refried beans, and reduced-fat cheese, these nachos deliver all the taste without the extra calories.


1/2 cup fat-free dairy sour cream
1 tablespoon cilantro, snipped
1 tablespoon cooking oil
1 small zucchini, shredded
1 medium red onion, coarsely chopped
1/2 cup shredded carrot
1 1/2 teaspoon cumin
15 ounces no fat refried beans
4 ounces sliced jalapenos, drained
1/2 cup tomato, seeded and chopped
3/4 cup shredded reduced-fat cheese, cheddar or mozzarella

Combine the sour cream and cilantro.
In a large skillet, heat the oil. Saute the zucchini, onion, carrot, and cumin in the oil over medium heat until vegetables are crisp-tender. Stir in refried beans.
Arrange the tortilla chips in a large broiler-proof baking dish or cookie sheet. Spoon the vegetable/bean mixture on the chips. Top with green chiles, tomato, and cheddar cheese. Place under broiler until cheese is melted. Transfer to a serving plate, top with dollops of the sour cream mixture and the salsa.
Variations: add sliced jalapenos and/or black olives Use a mixture of mozzarella and cheddar cheeses

Instead of zucchini I used green bell peppers and used white onion instead of red.

I love nachos but my hips don't! I have to say I was very intrigued by the healthier ingredients in this recipe. Carrots, zucchini? Ok, I'm game! While it isn't of course just like nachos you get at a restaurant, it is a pretty decent substitute if you are looking to cut some calories. I will definitely make this again when I'm craving them but don't want to pack on pounds just to satisfy a snack attack!
