A treat for the olive lover! Ripe olives are made into a paste with pine nuts, olive oil, and garlic and spread on toasted slices of French bread. The olive paste also is amazing as a spread on sandwiches or as a dip.


1 jar (12 ounce size) ripe olives, pitted and drained
3 tablespoons olive oil
2 tablespoons toasted pine nuts
2 cloves garlic, minced
salt and pepper, to taste
1 loaf french bread
Preheat the oven to 350 degrees F.
Combine the olives, olive oil, pine nuts, and garlic in a food processor. Process until smooth. Add salt and pepper to taste.
Slice the bread into 3/4-inch slices and place on a baking sheet in a single layer. Place the baking sheet in the oven and toast the bread for 10 minutes or until light golden brown.
Spread one side of each crostini with some of the olive mixture. Serve the olivada crostini immediately.

Definitely for the olive lover! The olivada mixture also would make a great dip.
