1 cup honey
2 cinnamon sticks, broken in half
1 teaspoon whole cloves
lemon zest (1-inch x 1/2-inch)
1 vanilla bean (2-inch long)
1/4 teaspoon ground ginger
1 pinch ground cardamom
Warm the honey slightly and pour over spices in a glass canning jar. Seal and leave to blend for 3 to 4 weeks.

Instead of letting the honey sit for 3 weeks I just kept it on really low heat on the stove for about 30 minutes with all the spices then jarred it. Had lots of flavor right away.

I use honey on a lot of things even just like toast or oatmeal so spicing it up like this is a great idea! The hardest part was letting it sit for 3 weeks!
