This delicious dessert is also known as scalloped pineapple or pineapple stuffing because of the bread in it. It's thick like bread pudding but with tropical flavors.

3 eggs, beaten
1/2 cup butter
1 cup white sugar
1 can (20 ounce size) crushed pineapple with juice
1/2 cup milk
4 cups soft bread cubes
1/4 teaspoon vanilla extract


Preheat oven to 375 degrees F.

In a mixing bowl, cream together butter and sugar. Add eggs, milk, pineapple and juice, bread cubes, and vanilla. Mix together. Bake in a 2 quart casserole dish for 45 minutes.

I think I would have liked bigger chunks of pineapple instead of the crushed. I'll use tidbits next time. Otherwise pretty good.

I made this recipe was very good....after pudding cooked I sprinkled brown sugar on top and place under the broiler for a couple really added a good flavor to the pudding and a crunch on top....thanks for sharing this recipe.....
