Frozen Pineapple on a Stick

ingredients
8 pieces (about 3 x 1 inch size) fresh pineapple
1/4 cup pineapple juice or orange juice
3/4 cup shredded coconut, toasted
directions
Line a cookie sheet with waxed paper. Insert a wooden skewer into the narrow end of each piece of pineapple. Dip pineapple into juice, then roll in coconut, coating completely.
Place on a cookie sheet. Cover and freeze for 1 to 2 hours or until firm. Let stand for 5 to 10 minutes before serving.
