Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

This tasty pork chop dinner is a dieter's delight because it's both low carb and low fat (and delicious)
4 boneless pork chops (5 ounce size)
salt and pepper, to taste
1 cup salsa
1 bell pepper, seeded and chopped
1 cup chopped white onion
Season the pork chops as desired with the salt and pepper.
Heat a non-stick skillet coated with cooking spray over medium heat. Add the pork chops and cook, turning as needed, until browned on both sides.
Sprinkle the bell pepper and onion around the pork chops. Pour the salsa over all. Bring to a simmer then cover the pan.
Let the chops and vegetables simmer for 30 minutes or until the pork is cooked through.
For extra flavor, marinate the pork chops in salsa for a few hours before cooking.
Use a meat thermometer to make sure the pork chops are cooked to the correct temperature.
To add a creamy touch, stir in a dollop of sour cream or Greek yogurt before serving.
Try different types of salsa for flavor variations.
If the pork chops are thicker, you may need to increase the cooking time to make sure they are fully cooked.
Garnish with fresh cilantro or a squeeze of lime juice.
To make it spicier, add some diced jalapenos or a sprinkle of cayenne pepper to the dish.
Boneless pork chops are recommended for this recipe due to their quick cooking time and overall tenderness. If you use bone-in pork chops adjust the cooking time as needed.
You can use any type of salsa you prefer, or even a different sauce like BBQ sauce or a marinara sauce for a different flavor.
You can substitute the pork chops with chicken breasts or thighs or turkey cutlets. Adjust cooking time accordingly.
Feel free to add more vegetables like diced tomatoes, zucchini, or mushrooms to bulk up the dish and add more nutrients.
You can bake the pork chops in the oven at 350 degrees F with the vegetables and salsa for 30 minutes (or until cooked through) for a different texture and flavor.
The pork chops should reach an internal temperature of 145 degrees F. Cut into one to check for doneness if needed.
Store the pork chops and vegetables in an airtight container in the refrigerator for up to 4 days. Reheat gently in a skillet, in the microwave, or in the oven.
Non-Stick Skillet: A non-stick skillet is essential for cooking the pork chops, allowing them to brown without sticking and requiring minimal oil due to the cooking spray.
Measuring Cups: For measuring the salsa and onion.
Turner or Spatula: For flipping the pork chops in the skillet.
Lid or Cover: A lid is needed to cover the skillet while the pork chops and vegetables simmer, helping to retain moisture and heat for thorough cooking.
Chopping Knife and Cutting Board: Used for chopping the bell pepper and onion.
Stir-Fried Spinach: Serve stir-fried spinach alongside the pork chops for a vibrant, nutritious side. The earthy flavor of the spinach balances well with the tangy salsa.
Cauliflower Rice: Use cauliflower rice as a low-carb substitute for traditional rice. It absorbs flavors beautifully, making it a great canvas for the salsa and pork.
Mexican Street Corn: This fresh salad adds sweetness and crunch, perfect for complementing the savory pork. The hint of lime and cilantro brightens up the dish.
Avocado Slices: Creamy avocado slices add a rich texture that contrasts with the juicy pork and enhances the Mexican theme. Plus, they offer healthy fats for a well-rounded meal.
Cilantro Lime Dressing: Drizzle this zesty dressing over the finished dish for an extra punch of flavor. It freshens up the meal while complementing the existing salsa.
Grilled Zucchini: Grilled zucchini provides a smoky flavor and keeps the dish light and healthy. It adds a nice texture contrast to the pork chops.
Black Bean Salad: A chilled black bean salad adds protein and fiber while providing a hearty side. Its mix of flavors and textures will make every bite interesting.
Spicy Yogurt Sauce: A dollop of this sauce would add creaminess and a kick. It can help cool down the spicy flavors from the salsa and enhance the overall experience.
Pickled Red Onions: The tanginess of the pickled red onions brightens up the dish, offering a refreshing contrast to the richness of the pork. They also bring a pop of color to the plate.
Corn Tortillas: Use these to create mini tacos with the pork and vegetables. They provide a fun, hands-on way to enjoy the meal.
Wine Pairings
Chardonnay: Look for a lightly oaked Chardonnay that isn't overly buttery. Its crisp acidity balances the richness of the pork while complementing the zesty salsa and bell peppers.
Tempranillo: A medium-bodied Tempranillo can add a note of spice and fruitiness to the mix. Its gentle tannins and flavors of cherry and leather create a harmony with the Mexican flavors in the salsa.
Sauvignon Blanc: Go for a bright, zesty Sauvignon Blanc with citrus notes to match the vibrant flavors and fresh veggies. Its acidity will cut through the pork.
Other Alcohol Pairings
Margarita: A classic margarita with fresh lime juice can enhance the dish's flavors and add a fun twist. The acidity in the cocktail pairs wonderfully with the salsa.
Pale Ale: A citrusy pale ale will add a nice hopiness that complements the salsa while providing a refreshing contrast to the savory pork. Look for one with hints of grapefruit or orange for that extra zing.
Cerveza: A light Mexican beer, like a Corona or Pacifico, serves as the perfect easy-going companion. It's crisp, refreshing, and won't compete with the dish.
Non-Alcoholic Pairings
Sparkling Water with Lime: A bubbly sparkling water with a squeeze of lime can mimic some of those vibrant flavors in your dish. It's ridiculously refreshing and helps chase away the heat from the salsa without stealing any thunder.
Hibiscus Iced Tea: This floral and slightly tart drink pairs nicely with the flavors in your pork. It adds a splash of color and an interesting twist.
Tomato Juice: A nice, tangy tomato juice could bring out the flavors of the salsa. Think of it as the non-alcoholic version of a Bloody Mary - without the hangover.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!

Very easy recipe and it is indeed low calorie when using lean pork chops. You can get a lot of flavor from the salsa you choose (so choose wisely!). This recipe also works well with chicken.
