Cider Grilled Pork Chops

Thick-cut chops make such a huge difference for getting juicy, tender pork. The zesty cider marinade with lemon juice and chopped apples pulls double duty and makes a delicious glaze to finish off the chops on the plate.

ingredients

1 1/2 cup apple cider
2 tablespoons honey
2 tablespoons soy sauce
2 tablespoons fresh lemon juice
1/2 teaspoon grated lemon zest
1/2 teaspoon dried sage
1 apple, peeled, cored and chopped
2 scallions, finely chopped
2 cloves garlic, minced
2 teaspoons minced fresh ginger
4 loin pork chops, 1-inch thick, trimmed of any fat
2 tablespoons cold butter
salt and pepper, as desired
1 tablespoon melted butter

directions

Combine the apple cider, honey, soy sauce, lemon juice, lemon zest, sage, chopped apple, green onions, garlic, and ginger in a bowl. Mix until the honey is dissolved.

Place the pork chops in a zip-top plastic bag or a baking dish. Add the marinade and turn the meat to coat in the marinade. Refrigerate for 2-8 hours, turning the chops to coat in the marinade once or twice.

Preheat the grill to medium-high heat.

Drain the marinade from the chops into a saucepan. Bring to a boil and cook for 5-7 minutes or until it has reduced and thickened. Whisk in the cold butter, salt, and pepper. Keep the sauce warm.

Brush both sides of the pork chops with the melted butter. Place on the hot grill and cook for 4-5 minutes per side or until cooked to desired doneness. Do not overcook the pork or it will be dry.

Place the cooked pork chops on individual serving plates. Drizzle with the sauce and serve immediately.

Measuring Spoons: For measuring ingredients like the honey, lemon juice, dried sage and ginger needed in the marinade.

Knife: To peel, core, and chop the apple, as well as mince the garlic and ginger. Alternately, you can use a vegetable peeler to peel the apple. A knife is also needed to trim any fat from the pork chops.

Cutting Board: To prepare and chop the apple, scallions, garlic, and ginger.

Mixing Bowl: To combine the apple cider, honey, soy sauce, lemon juice, lemon zest, sage, apple, scallions, garlic, and ginger for the marinade.

Zip-Top Plastic Bag or Baking Dish: To marinate the pork chops in the prepared apple cider mixture.

Grill: To cook the pork chops over medium-high heat.

Saucepan: For reducing and thickening the marinade into a glaze to drizzle over the cooked pork chops.
