Slow Cooker Chinese Pork Chops

These slow cooked pork chops get a hint of Asian flavor in this recipe using brown sugar, ground ginger, soy sauce, ketchup, and garlic.

ingredients

6 1-inch thick pork chops, excess fat trimmed
1/4 cup packed brown sugar
1 teaspoon ground ginger
1/2 cup soy sauce
1/4 cup ketchup
2 cloves garlic, mashed
salt and pepper, to taste

directions

Place the pork chops in the bottom of the crock pot.

In a measuring cup or bowl, combine the brown sugar, ginger, soy sauce, ketchup, and garlic. Mix well. Pour the mixture over the pork chops.

Cover the crock pot and cook on low heat for 4-6 hours or until the pork is cooked through and tender.

Adjust the seasoning as needed with salt and pepper before serving.

    Very good! Used pork tenderloin cut into 1" cubes, sprinkled sesame seeds over the top, added water chestnuts the last hour (1 small can, sliced). Turned out very tender and will definitely fix it again.

    can you use a rice cooker instead of a slow cooker?

    • Rice cookers and slow cookers don't work the same way so they aren't interchangeable in a recipe like this.

    How do you get grill marks (pictured) from cooking in a crock pot?

    • A lot of people prefer to sear meat before putting it in the crock pot. The person who submitted the photo may have seared it in a grill pan first. Another thing you can do is to put meat under a broiler when it's done to give it better texture and appearance. Crock pot food usually isn't very attractive.

    • We haven't tested the recipe with spare ribs but it should work just fine.

    Cooked on low, burnt!

    • It definitely shouldn't burn on low! I'd make sure your crock pot lid fits snuggly because it sounds like it might be letting steam escape during the cooking process. I've noticed some brands of crock pots have poorly fitting lids that cause this problem.

    I used a cubed pork loin as was suggested by someone else. Cooking on low for 4 hours was perfect. Not dried out at all. Stirred in a little cornstarch at the end to thicken the liquid and served it with some asian veggies and rice. Loved by all.

    Used boneless pork chops and cooked on low for 6 hours. Very very dry and almost inedible. I think a pork with more fat needs to be used in a slow cooking process. The sauce was ok but I'm not sure I would call it Chinese.
