Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This is delicious! And very easy to make. The only thing I did differently was to top it with cheddar cheese instead of the parmesan. Either way would be good though! Served it with crusty bread and a glass of wine. I will definitely make this again.
