This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

Black-eyed peas have never had it so good. Ham, macaroni and crunchy corn chips turn them into a scrumptious casserole that would belong on any table in the Lone Star state. If you want to be really true to Texas, make a double batch.

2 cups cooked diced ham
1 small onion sliced
1 green bell pepper, chopped
1/4 cup bacon drippings
1/2 cup hot water
1 can (16 ounce size) black eyed peas with jalapenos, drained
1 can (16 ounce size) black eyed peas, drained
crumbled corn chips for topping
2 cups cooked macaroni drained
grated Cheddar cheese
Brown ham, onion and pepper in bacon drippings. Add hot water and simmer for 2 minutes. Combine mixture with the two cans of peas, macaroni and salt and pepper to taste.
Turn into 2 qt. casserole and bake at 350 degrees F for 25 minutes. Top with crushed corn chips and grated cheese and return to oven for 5 minutes.

Ham, bacon drippings, corn chips? How can you go wrong? I honestly wasn't expecting this recipe to be so scarf-it-down delicious - but it was (and then some). Everything about it was tasty, especially the corn chips. Go heavy on the corn chips - they add a nice saltiness and crunch.
