Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Ham and Rice Casserole

ingredients
1 1/2 cup rice
3 cups water
1/4 cup butter
1 small onion, diced
1 can cream of celery soup
8 ounces sour cream
8 ounces cream cheese, softened
3/4 cup milk
2 cups diced cooked ham
1 1/2 cup grated Cheddar cheese
1 can French fried onion rings, crushed
directions
Combine rice and water and bring to boil. Reduce heat to very low and cook until water is completely absorbed, about 20 minutes.
Melt butter in skillet and saute onions. Turn rice into greased 9x13 inch baking dish and drizzle with butter and onions.
Combine soup, sour cream, cream cheese and milk in a saucepan and cook until smooth. Layer ham evenly over onions and top with soup mixture.
Cover with foil and bake at 350 degrees F for 30 minutes. Uncover and sprinkle with grated cheese and crushed onion rings. Continue baking for 10-15 minutes more.

This recipe takes a little time to prepare, but it really turned out good and tasty. I had friends over and they asked for the recipe. I will use it again!
