Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

This soup is packed with flavorful onions, carrots, potatoes, and kielbasa, and gets its rich flavor from beef stock and tomatoes. The soup is easy to make and can be on the table in less than an hour.
2 teaspoons canola oil
1 cup chopped onions
1 cup peeled and thinly sliced carrots
1 cup peeled and diced potatoes
1/4 pound kielbasa, sliced
19 ounces canned diced tomatoes, undrained
4 cups shredded cabbage
2 1/2 cups beef stock
1/4 cup chopped fresh parsley
1 tablespoon sugar
1/2 teaspoon paprika
1/2 teaspoon black pepper
Heat the oil in a large saucepan over medium heat. Add the onions, carrots, potatoes, and kielbasa and cook for 5 minutes, stirring frequently, until the onions are soft.
Add the undrained tomatoes, shredded cabbage, beef stock, parsley, sugar, paprika, and pepper.
Bring the soup to a boil. Cover the pan and reduce the heat to a simmer. Let the soup simmer for 20 minutes or until the carrots, potatoes, and cabbage are tender.
Serve the soup hot.
Try different types of cabbage, such as savoy or Napa cabbage, for different textures.
Top the soup with a dollop of sour cream or a sprinkle of grated cheese.
Add a pinch of crushed red pepper flakes for a spicy kick to the soup.
You can use any type of smoked or precooked sausage, such as Andouille, chorizo, or even hot dogs. You can also use sausage like Italian sausage but you'll want to pre-cook it before adding to the soup.
You can use fresh diced tomatoes instead of canned but you may need to add extra liquid.
You can use chicken or vegetable stock as a substitute for beef stock, the soup won't be quite as rich but will still be tasty.
You can make the soup ahead of time and store it in the refrigerator for up to 3-4 days. Reheat gently on the stove before serving.
Yes, this soup freezes well. Let it cool completely, then transfer to airtight containers or freezer bags for up to 3 months. Thaw overnight in the fridge before reheating.

This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I use this reciepe every year for a dinner I do at a club. It has been a hit since I first introduced it 4 years ago, and the people always ask me if I'm making it. This year I made for 30 servings and there was nothing left, they ate it all!
