A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

ingredients
2 cups mushrooms, chopped (a mixture is nice, you can also use stems)
1/8 teaspoon Worcestershire sauce
1/4 cup green onions, slivered
2 eggs
1/4 cup Swiss cheese, shredded
3/4 cup bread crumbs
salt and pepper, to taste
3/4 cup cooked wild rice
directions
Mix all together and let stand a few minutes. Shape into patties.
Cook in a hot non stick skillet with a wee bit of olive oil, 3 minutes on each side. Serve as you would regular burgers.

It is not labeled as vegan - only vegetarian, and some vegetarians do eat eggs.
Note that Worcestershire sauce has anchovies in its base.
