After giving up meat, sometimes you just need something to sink your teeth into. Enter the whole grain soy burgers! Soybeans and oats give you plenty to bite down on, and they're a perfect base to top with avocado, tomato, and red onion.
1 can (15 ounces) cooked soybeans, well drained
1 tablespoon Worcestershire sauce
2 tablespoons tomato paste
1 tablespoon minced garlic
1/2 tablespoon dried oregano
1/4 tablespoon dried basil
2 teaspoons onion powder
1/2 cup raw rolled oats
1/2 cup wheat germ
salt and pepper, optional
Place the soybeans in a large bowl and mash with a potato masher or two forks until partially mashed.
Add the Worcestershire sauce, tomato paste, garlic, oregano, basil, onion powder, oatmeal, and wheat germ to the bowl. Mix until well blended.
Divide the mixture into equal-sized portions and form each into a flat patty.
Heat a skillet over medium-high heat. Lightly grease the skillet and add the patties (in batches if needed). Cook until well browned on each side. Season the burgers as needed with salt and pepper, if desired.
Serve the soy burgers on buns, toast, or use in other recipes. These can also be made into meatballs and browned in a skillet or oven.
