8 ounces shredded sharp cheddar cheese
1/2 cup finely chopped red onion
2 jalapeno peppers, finely chopped, seeded if desired
2 cloves garlic, minced
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
8 hamburger buns

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This is a real Texas style cowboy burger, except for the garlic which detracts from the flavor of the peppers and bacon. We put cowboy burgers on buttered, toasted buns with mustard and pickles.
