Layers of ham, onions and potatoes covered in cheese sauce are what comfort food dreams are made of. Be careful at holiday time, this side dish may just upstage the main course.
3 tablespoons all-purpose flour
1/2 cup milk
1 can (10 ounce size) Cheddar cheese soup
1 1/2 cup freshly grated cheese (Cheddar or other)
3 medium potatoes
2 medium onions
1 teaspoon salt
1/2 teaspoon black pepper
3 cups cubed cooked ham
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish.
Combine the flour and milk in a saucepan over medium heat and whisk until smooth. Cook, stirring constantly, until the sauce has thickened. Stir in the soup and grated cheese. Cook, stirring frequently, until the cheese has melted. Reduce the heat to low and keep warm.
Peel and thinly slice the potatoes. Thinly slice the onions.
Layer half of the potatoes and half of the onions in the baking dish. Season with half of the salt and pepper. Pour half of the cheese sauce over the potatoes. Evenly top with half of the cubed ham. Repeat the layers of potatoes and onions, salt and pepper, cheese sauce, and ham.
Place the baking dish in the oven and bake at 350 degrees F for 2 hours or until the potatoes are tender.

time to cook--mine 45 minutes in a 9x13. Sprinkled a little powdered garlic for the salt called for. Could not find soup here so used cheese dip and added a little more milk and no flour. All in all was quite good. May make it again !!

I don't know how many scalloped Potato recipes I've tried over the years, but this one is the best. It's so easy to make, and tastes wonderful. The only thing I would change is the amount of salt, but that is personal taste and not reflective of this recipe. Thank you for a great scallop recipe!
