Tofu

Tofu

Tofu (also called soybean curd, or simply just bean curd) is essentially curdled soy milk. It's extracted from cooked, mashed soybeans and then pressed similarly to how cheese is made.

You can substitute tempeh or seitan in place of tofu in most recipes. Once you get used to cooking with it you will find it's easy to substitute it for meat in your favorite recipes.
