Tofu Meatloaf

ingredients

1 container tofu
1/3 cup ketchup
1/3 cup soy sauce
2 tablespoons Dijon mustard
1/2 cup fresh parsley, chopped
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 medium onion, fine chopped
1 cup whole grain bread, made into crumbs or crushed corn flakes, or enough to bind mixture

directions

I like this best when cold. Great with ketchup.

Drain tofu well and mash. Combine all ingredients and mix well. Place in a loaf pan coated with 1/4 cup olive oil. Press mixture into pan with hands. Bake in a 350 degrees F oven one hour.

Cool in pan 15 minutes and carefully remove and invert onto serving platter. Serve with mashed potatoes. Garnish loaf if desired with ketchup, barbecue sauce and fresh chopped parsley. When cold, slices nicely for sandwiches.
