Slow Cooker Vegetarian Chow Mein

ingredients
1 pound seitan or extra-firm tofu, cubed
4 stalks celery, sliced
3 carrots, grated
6 green onions, sliced
1 can (8 ounce size) sliced water chestnuts
1 cup vegetable broth
1/3 cup soy sauce
1/4 teaspoon crushed red pepper flakes, or to taste
1/2 teaspoon ground ginger
1/2 cup bean sprouts
1/4 cup cornstarch
1/3 cup cold water
directions
Combine the tofu, celery, carrots, green onions, water chestnuts, broth, soy sauce, crushed red pepper, and ginger in the crock pot. Mix well to combine.
Cover and cook on low heat for 6-8 hours or until the vegetables are tender.
Stir in the bean sprouts. In a bowl, whisk together the cornstarch and water until the cornstarch is dissolved and it forms a slurry. Stir the cornstarch mixture into the liquid in the crock pot.
Turn the heat to high and cook for another 15 minutes or until the sauce thickens.
Stir well then serve over rice, dry chow mein noodles, or other noodles.
