Asian Tofu Burgers with Hoisin Sauce, Cilantro and Ginger

ingredients
1 pound extra firm tofu
1/4 cup fresh cilantro leaves
1 clove garlic
1 teaspoon minced (or grated) peeled fresh ginger
1/4 cup chopped green onions
3 tablespoons hoisin sauce
1 tablespoon mayonnaise
2 eggs, lightly beaten with fork
2 tablespoons flour
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 1/2 teaspoons Asian sesame oil
1 cup panko bread crumbs (or unseasoned bread crumbs)
1 tablespoon peanut or vegetable oil
4 large sesame-seed hamburger buns
8 butter lettuce (Boston lettuce) leaves
Sriracha sauce (Thai chili sauce, optional)
directions
Mash the tofu with a fork until it's the consistency of ground beef substitute.
Place cilantro, garlic, ginger and scallions in the bowl of a food processor and pulse to chop finely. Add to tofu along with the hoisin sauce, mayonnaise, egg, flour, salt and pepper and mix thoroughly.
Form mixture into 1/2-inch thick patties. Cover and refrigerate 1 to 4 hours. (This will help the patties firm up a bit. If you're in a hurry, you can put them in the freezer for a half an hour.)
Heat oil in a large skillet over medium-high heat. Dredge patties in bread crumbs and slip them into hot oil. Cook until golden brown and crisp on one side (approximately 3 to 5 minutes) and then flip to cook other side.
Drain and serve with lettuce on the buns or bunless with lettuce on the side.
Top with hoisin sauce, mayonnaise and/or Sriracha sauce as desired.
