Princess Chicken (or Princess Tofu)

ingredients
1 pound boneless chicken or firm tofu
2 tablespoons cornstarch
1 tablespoon soy sauce
10 dried hot red peppers (1")
Seasoning Sauce
1 tablespoon sake
2 tablespoons soy sauce
1 tablespoon sugar
1 teaspoon salt
1 teaspoon cornstarch
1 teaspoon sesame oil
1 cup vegetable oil
1 teaspoon Szechuan peppercorns
1 teaspoon fresh ginger, minced
1/2 cup roasted peanuts, chopped
rice for serving
directions
Skin the chicken if necessary and chop chicken or tofu into 1" pieces. Combine cornstarch and soy sauce in medium bowl. Add chicken (tofu); mix well and let sit for 30 minutes.
Meanwhile cut stems from dried peppers and set aside. Combine ingredients for seasoning sauce in small bowl, set aside.
Heat oil in wok over high heat, about 1 minute. Stir-fry chicken (tofu) about 2 minutes, until lightly browned. Remove and drain chicken. Remove all but 2 Tbs. oil from wok. Reduce heat to medium.
Stir-fry dried peppers and Szechuan peppercorns until peppers turn dark brown. Add minced ginger and cooked chicken (tofu), stir-fry 1 minute. Add seasoning sauce.
Stir well and cook until sauce thickens slightly. Remove wok from heat. Stir in peanuts. Serve hot over rice.
