It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

If you're a fan of bagels with cream cheese and lox (and who isn't) you'll go crazy for this dip. It makes a perfect party snack on crackers, especially with a little fresh-sliced tomato to add that burst of freshness.
1/2 pound smoked salmon
1/2 pound cream cheese, softened
2 tablespoons sour cream
1 tablespoon mayonnaise
1 tablespoon lemon juice
1 teaspoon Tabasco sauce
1/2 teaspoon black pepper
1/4 teaspoon dried dill
1 pinch paprika
Flake the salmon with a fork and set aside.
In a mixing bowl, combine the cream cheese, sour cream, mayonnaise, lemon juice, Tabasco, black pepper, dill, and paprika. Beat on medium speed with an electric mixer until smooth.
Stir in the flaked smoked salmon. Serve immediately with crackers or chips.
