Delicious homemade crispy potato chips with light Italian seasonings.

2 tablespoons olive oil, more if needed
2 cups thinly sliced red or russet potatoes
1 teaspoon dried Italian seasoning
salt and pepper, to taste
Heat the oil in a large skillet over medium-high heat. Add additional oil as needed. You'll want a thin layer coating the entire bottom of the skillet.
Place the potatoes in the skillet in a single layer. Cook for 5-6 minutes or until golden brown. Turn the potatoes over and season with the Italian seasoning. Let cook for another 5 minutes or until the bottom side is browned.
Remove the potatoes with a slotted spoon and place on paper toweling. Sprinkle with salt and pepper and then serve while still slightly warm.
