Italian Potato Chips Recipe

Serves/Makes: 2
Ingredients:
2 tablespoons olive oil
2 cups red or russet potatoes, thinly sliced
1 teaspoon Italian seasoning
Salt and pepper to taste
Directions:
Heat olive oil in a large skillet over medium high heat. Spread potatoes in hot oil. Cook, uncovered, for 5 to 6 minutes or until golden brown. Flip potatoes. Sprinkle Italian seasoning evenly over top.
Cook, uncovered, another 5 to 6 minutes. Place potatoes on a serving platter, add salt and pepper.
