Zucchini With Ginger

ingredients
1 pound small zucchini
2 cloves garlic
1 piece fresh ginger (1 inch size)
3 tablespoons vegetable oil
3 coriander seeds, crushed
1/4 teaspoon chili powder
1/2 teaspoon cumin
1 teaspoon garam masala (Indian spice mixture)
1/4 cup light brown sugar
1/4 cup malt vinegar
salt
black pepper
directions
Cut zucchini into thin slices. Finely chop garlic and ginger.
Heat oil, add zucchini, and saute briefly. Add garlic, ginger, and spices. Sprinkle with sugar, then pour in vinegar and simmer 5 minutes. Season with salt and pepper. Let cool and marinate at least 3 hours.
Use with Asian meat fondues.

When zucchini are large, they should be seeded before cutting. For this, halve zucchini lengthwise and scoop out seeds with a spoon.
