3 cups grated zucchini
2 eggs, beaten
1 1/2 cup Bisquick baking mix
1 cup shredded cheddar cheese
1 small onion, diced
salt and pepper, to taste
Grate the zucchini and squeeze out any excess liquid.
Combine the zucchini, eggs, baking mix, cheese, onion, and salt and pepper as desired in a bowl. Mix well. Cover the bowl and refrigerate overnight.
Preheat and grease a waffle iron as directed by the machine manufacturer.
Add the waffle batter and cook the waffles as directed until done. Serve hot.

These turned out really tasty. I took the other reviewers suggestion and topped them with an egg (fried not poached though) and then a slice of cheese and put under the broiler for a minute to melt. Also, just wanted to say that I love the new look to the website! I'm finding things easier now when using my iphone.

My husband hates zucchini but he really likes these "savory" waffles. We poach and egg, put in on top and then spoon over some bearnaise. Really good for breakfast or whatever. And no it doesn't need any other liquid.
