3 cups zucchini, sliced
1 cup bisquick baking mix
1/2 cup onion, chopped
1/2 cup Parmesan cheese
2 tablespoons parsley
1/2 teaspoon oregano
1/2 teaspoon salt
1 dash black pepper
1/4 cup vegetable oil
4 eggs, slightly beaten

directions

Combine all ingredients until well mixed. Pour into a greased baking dish.

Bake at 350 degrees F for 35 minutes or until top is golden brown and mixture is set.

    Got this recipe about 25 yrs ago from former co-worker and used several times over the years. Was delighted to find it online when I couldn't locate my worn written recipe card. This is a great appetizer or snack. I increase the Bisquick to 1-1/3 cups, add 1/4 cup water and go generous with the parm and onions. Sit a bottle of hot sauce on the table for those who like some kick.

    Excellent recipe. I have made this to serve at parties and everyone asks for the recipe. Also I have taken to to a potluck and it was eaten quickly! Who knew such a easy recipe could be such a hit. I often call it "crustless quiche" becase I make it in a piepan and it takes very much like quiche if you bake until the top is brown and crisp.
