3 tablespoons olive oil
4 medium zucchini, thinly sliced
2 cloves garlic, crushed
1 tablespoon vinegar
1 cup water
salt and pepper
3 tablespoons pine nuts
In a large skillet, heat oil and saute garlic for 2 minutes. Add zucchini and saute on both sides until golden. Sprinkle with pine nuts, raisins, and salt and pepper to taste and simmer for 3 minutes.
Mix vinegar with water and pour into skillet; cover and simmer slowly until zucchini is tender, about 10 minutes. Discard garlic; cool and serve at room temperature.
