Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Really good! I thought this was too simple so I added chopped onion, used fresh basil and parsley, and dried oregano and some red pepper flake. I baked it 30 min then added bread crumbs and broiled to toast. It was really good. The squash was still crunchy.
