Cassoulet of Zucchini and Rice with Mushrooms, Onions and Cheese

ingredients
1 pound zucchini, cleaned and sliced (Do not peel)
1/2 cup green onions, finely chopped
1/2 pound mushrooms, thinly sliced
2 cloves garlic, minced
4 tablespoons butter
2 tomatoes, peeled, seeded and chopped, fresh or canned
2 cups Monterey jack cheese, grated
3 eggs, beaten
1 can (2 ounce size) French fried onions
salt and pepper, to taste
2 cups cooked rice
directions
Saute the zucchini, green onions, mushrooms, and garlic in butter in a large skillet until vegetables are tender. Remove vegetables to a large bowl and stir in the remaining ingredients until mixed.
Spread vegetable-rice mixture into a baking dish and bake at 350 degrees F for 40-45 minutes or until the top is light golden brown.
