All-Day Slow Cooker Zucchini Souffle

ingredients
3 zucchini
1 3/4 cup biscuit baking mix
3/4 cup Parmesan cheese
1/4 cup oil
4 eggs, well beaten
1 large onion, diced
3 cloves garlic, minced
3 tablespoons minced fresh parsley
salt, to taste
directions
Grease the inside of the crock pot.
Grate the zucchini on a box grater. Combine with the remaining ingredients in a bowl and mix well to combine.
Put the zucchini mixture in the crock pot. Cover the crock pot and cook on low heat for 6 hours or until the souffle is set.
