Parsley-Shallot Vinaigrette

This easy, 6 ingredient vinaigrette goes great over lettuce or vegetable salads.

ingredients

2 tablespoons red wine vinegar
1/4 teaspoon fine sea salt
6 tablespoons olive oil
3 small shallots, minced
1/2 cup loosely packed fresh parsley leaves, finely chopped
freshly ground black pepper, to taste

directions

Combine the vinegar and salt in a small bowl. Stir well until the salt dissolves.

Add the olive oil, minced shallots, parsley, and black pepper. Whisk until blended. Serve immediately over your favorite salad greens.
