Homemade dressing is the easiest way to give your salads an upgrade. Benihana's ginger dressing works on everything from a simple spinach side salad to a full-out dinner salad.

1/4 cup chopped onion
1/4 cup peanut oil
2 tablespoons water
1 tablespoon chopped celery
1 tablespoon peeled and chopped fresh ginger root
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
1 1/2 teaspoon tomato paste
1 1/2 teaspoon granulated sugar
1 teaspoon lemon juice
salt and pepper, to taste
Combine the onion, oil, water, celery, and ginger in a food processor. Process to combine. Add the vinegar, soy sauce, tomato paste, sugar, and lemon juice. Process until smooth.
Season to taste with salt and pepper. Use the ginger salad dressing immediately, or store in an airtight container in the refrigerator for up to 10 days.

I found this WAY to sweet. I had to put 4 times the amount of ginger to even come close to the restaurant's flavor. I would cut back on the tomato paste and add some grated carrots.

This is a great copycat recipe. I made it several times, it takes a while to chop all the ingredients, but it tastes awesome. I have eaten at a few Japanese restaurants around my area, and their ginger dressing is not as good as this one.
I've made this one of my regular recipes. It tastes great! Easy to make after you chop everything up.
