ingredients
2 teaspoons roasted garlic
1/4 cup mirin
2 tablespoons rice vinegar
2 tablespoons vegetable or chicken stock or water
2 tablespoons yellow or white miso, or to taste
1/2 cup olive oil
1 squeeze fresh lemon juice
salt and freshly ground black pepper, to taste
sugar, to taste
directions
Add the garlic, mirin, rice vinegar, vegetable or chicken stock, and miso to a bowl. Whisk together until a smooth paste forms.
While whisking, add the olive oil and lemon juice.
Season to taste with salt, pepper, and sugar.
Use immediately or store in a covered container in the refrigerator for up to 3 days.
